Matcha tea and chocolate brownies
Ingredients:
• 200 grams of dark chocolate
• 100 grams of butter
• 2 eggs
• 150 grams of brown sugar
• 1 teaspoon of vanilla extract
• 2 teaspoons of matcha tea powder
• 100 grams of wheat flour
• 1 pinch of salt
Preparation:
• Preheat the oven to 180°C and grease a 20x20 cm square pan with a little butter.
• Melt the chocolate: In a heat-resistant bowl, melt the dark chocolate together with the butter in the microwave or in a bain-marie. Stir a little to prevent the chocolate from burning.
• Mix the eggs and sugar: In another bowl, beat the eggs and brown sugar until you get a smooth, creamy mixture.
• Add the vanilla extract and matcha tea: Incorporate the vanilla extract and matcha tea into the egg and sugar mixture.
• Pour the melted chocolate mixture into the egg and sugar mixture, and mix until all the ingredients are completely incorporated.
• Add the flour and salt: Sift the wheat flour and the pinch of salt over the mixture and stir until no lumps remain.
• Bake: Pour the mixture into the prepared pan and smooth the surface. Bake in the preheated oven for approximately 20-25 minutes.
• Cool and cut: Let the brownie cool in the pan for about 10 minutes, then cut it into squares of the desired size.
Matcha tea and chocolate cake
Ingredients for the base:
• 1 cup of crushed chocolate cookies
• 1/4 cup of melted butter
Ingredients for the filling:
• 2 tablespoons of matcha tea powder
• 200 g of melted dark chocolate
• 500 g of cream cheese
• 1 cup of granulated sugar
• 3 eggs
• 1 teaspoon of vanilla extract
Preparation:
• First, let’s prepare the base: in a bowl, mix the crushed cookies with the melted butter until you get a uniform mixture. Place this mixture in the bottom of the pan you’re going to use and press it into the bottom, which you’ve greased beforehand, then refrigerate it while you prepare the filling.
• Now let’s move on to making the filling. In a large bowl, beat the cream cheese and sugar until you get a creamy mixture.
• Add the eggs one by one.
• Add the matcha tea powder and vanilla extract, mixing them well.
• Add the melted chocolate to the mixture and stir.
• Now it’s time to preheat the oven to 160°C.
• Pour the cream cheese, matcha tea and chocolate mixture over the cookie base in the pan.
• Bake for 40-45 minutes.
• Remove the cake from the oven and let it cool completely at room temperature before refrigerating it for at least 4 hours.
Matcha tea and chocolate truffles
Ingredients:
• 200 grams of dark chocolate (70% cocoa)
• 2 teaspoons of matcha tea powder
• 1/2 cup of cream
• 2 tablespoons of honey
• A pinch of salt
• 30 grams of unsalted butter
• Cocoa powder and matcha tea powder for decorating
Preparation:
• In a microwave-safe bowl, melt the dark chocolate with the butter. Stir it slowly during the process.
• Matcha tea infusion: Heat the cream in another saucepan over medium heat, but don’t let it boil. Just before it starts to boil, remove from the heat and add the matcha tea powder. Stir well until the matcha tea dissolves completely. Let it rest for a few minutes so the flavor blends.
• Pour the matcha tea infusion into the melted chocolate mixture. Add the honey and a pinch of salt. Mix everything until you get a homogeneous dough.
• Cover the mixture with plastic wrap and refrigerate it for at least 2 hours or until it’s firm enough to form truffles.
• Afterwards, with slightly dampened hands, take small portions of the mixture and form balls the size of a walnut. Place the truffles on a tray lined with baking paper. You can sprinkle cocoa powder over some truffles and matcha tea over others.
• Refrigerate the truffles again for at least 30 minutes before serving.
