Ingredients:

  • 4 salmon fillets
  • 1 teaspoon matcha powder
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon toasted sesame oil
  • Juice of 1 lemon
  • 1 clove garlic, finely chopped
  • Salt and pepper to taste

Preparation:

  1. In a small bowl, mix 1 teaspoon matcha powder, 2 tablespoons soy sauce, 1 tablespoon honey or agave syrup, 1 tablespoon toasted sesame oil, juice of 1 lemon, and 1 finely chopped garlic clove.
  2. Place the 4 salmon fillets on a tray and pour the marinade over them.
  3. Cover the tray with plastic wrap and let marinate in the refrigerator for at least 30 minutes.
  4. Preheat the oven to 200°C (392°F).
  5. Place the salmon fillets on a baking tray.
  6. Bake for 12-15 minutes or until the salmon is cooked to your liking.

 

Matcha Chicken with Vegetables

Chicken with vegetables, yes! And with matcha too! Give a twist to your homemade recipes with this combination of ingredients. Take note!

What will you need?

For the chicken:

  • 4 chicken breasts
  • 2 tablespoons matcha powder
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

For the vegetables:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 1 broccoli, cut into small florets
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Sesame seeds for garnish

Preparation:

For the chicken:

  1. In a bowl, mix the matcha, soy sauce, honey, minced garlic, lemon juice, and sesame oil.
  2. Marinate the chicken breasts, ensuring they are well coated. Let the chicken rest in the marinade for at least 30 minutes (1-2 hours for a more intense flavor).
  3. Preheat the oven to 200°C (392°F).
  4. Place the chicken on a baking tray and put it in the oven for 20-25 minutes, or until the chicken is fully cooked and juicy.

For the vegetables:

  1. Heat olive oil over medium-high heat in a large skillet and add the onion to sauté for 2-3 minutes.
  2. Add the bell peppers, carrot, and broccoli and continue sautéing for 5-7 minutes until the vegetables are tender but still crisp.
  3. Add soy sauce and sesame oil to the vegetables and mix well to coat them with the flavors.
  4. Finally, sprinkle some sesame seeds for a crunchy and decorative finishing touch.

 

Matcha and Mushroom Risotto

And just when you thought it couldn't get any better, we surprise you with an incredible risotto. Honestly, we're having a hard time concentrating on writing this article because everything is so delicious, and all we can think about is eating. Let’s get to the recipe!

Ingredients:

  • 1 ½ cups Arborio rice for risotto
  • 2 tablespoons matcha powder
  • 1 finely chopped onion
  • 3 cloves garlic, finely chopped
  • 1 cup fresh mushrooms, sliced
  • 1 cup dry white wine
  • 5 cups vegetable broth
  • 2 tablespoons butter
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Preparation:

  1. In a separate pot, heat the vegetable broth over low heat.
  2. Take a cup of hot broth and gradually dissolve the matcha, ensuring there are no lumps. Set aside for later use.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the mushrooms and cook until golden and tender. Remove from the skillet and set aside.
  4. In the same skillet, add a bit of butter. Add the onion and cook until translucent. Then add the garlic and cook for one more minute.
  5. Add the Arborio rice and stir constantly for 2-3 minutes until the rice is slightly toasted.
  6. Add the white wine and cook until it has evaporated almost completely, stirring occasionally.
  7. Once the wine has evaporated, add a tablespoon of the hot matcha broth and stir to allow it to absorb. Continue adding the hot broth and stirring until the rice is creamy and cooked al dente. This process will take about 18-20 minutes.
  8. Incorporate the sautéed mushrooms into the risotto and mix well.
  9. Add the grated Parmesan cheese and stir until the cheese melts.
  10. Season with salt and pepper to taste, and enjoy!

Snacks and Appetizers with Matcha

Matcha Hummus

Dare to try hummus with matcha! A fun and tasty recipe that gives a twist to the classic you already know with a touch of matcha. Dip with fresh veggies or pita bread and enjoy to the fullest.

Ingredients:

  • 1 can (400 g) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 tablespoon matcha powder
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Water (if necessary, to adjust consistency)
  • Sesame seeds and olive oil for garnish (optional)

Preparation:

  1. Drain and rinse the chickpeas to remove excess salt and preservatives.
  2. In a blender or food processor, place the chickpeas, tahini, olive oil, matcha powder, minced garlic, lemon juice, cumin, and a pinch of salt.
  3. Blend until smooth and creamy. If the hummus is too thick, add water gradually until you reach the desired consistency.
  4. Taste and adjust salt, lemon juice, or matcha according to your preference.
  5. Pour the hummus into a bowl. If desired, drizzle with olive oil and sprinkle sesame seeds on top.

 

Matcha Kale Chips

You will need:

  • 1 bunch of fresh kale
  • 1-2 tablespoons olive oil
  • 1 teaspoon matcha powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder (optional)

Preparation:

  1. Preheat the oven to 150°C (302°F).
  2. Wash the kale thoroughly and dry it completely.
  3. Remove the tough stems and tear the leaves into large pieces of similar size.
  4. Place the kale in a large bowl.
  5. Drizzle olive oil over the leaves and massage gently with your hands to ensure all the leaves are lightly coated with oil.
  6. In a small bowl, mix matcha powder, sea salt, and garlic powder (if using).
  7. Sprinkle the matcha mixture over the kale and toss well to ensure the leaves are evenly coated.
  8. Spread the kale leaves in a single layer on a baking tray lined with parchment paper.
  9. Bake in the preheated oven for 15-20 minutes, or until the leaves are crispy but not burned. Shake the trays halfway through the cooking time to ensure even baking.
  10. Let the kale chips cool on the tray for a few minutes before serving on a plate.

 

Toasted Nuts with Matcha and Sea Salt

Ingredients:

  • 2 cups mixed nuts (almonds, walnuts, hazelnuts, etc.)
  • 1 tablespoon melted coconut oil (or olive oil)
  • 1 tablespoon matcha powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon sugar (optional, for a sweet touch)

Preparation:

  1. Preheat the oven to 180°C (356°F).
  2. In a large bowl, mix the nuts with melted coconut oil, ensuring all the nuts are well coated.
  3. In a small bowl, mix matcha powder, sea salt, and sugar (if using).
  4. Sprinkle this mixture over the nuts and stir.
  5. Spread the nuts in a single layer on a baking tray lined with parchment paper.
  6. Bake for 10-15 minutes, stirring the nuts halfway through to ensure they toast evenly. Keep a close eye on them to avoid burning.
  7. Let the nuts cool on the tray for a few minutes before transferring them to a serving bowl.
