What is matcha tea and what is it for?
Matcha tea is a variety of green tea originating from Japan that comes in the form of a very fine powder. It is obtained by grinding high-quality green tea leaves that have been grown in the shade for the last few weeks before harvest. This shading process increases the production of chlorophyll and amino acids, which gives matcha its characteristic intense green color and umami flavor.
Some of its main health benefits include: a wealth of antioxidants, which help combat free radicals in the body, potentially reducing the risk of certain diseases and premature aging. It enhances energy and concentration by producing a state of relaxed alertness without the jitters that coffee can sometimes cause. Additionally, it boosts metabolism by increasing fat burning and promotes cardiovascular health by lowering bad cholesterol levels and improving the ratio of good to bad cholesterol.

What is the difference between Ceremonial Matcha and Premium Matcha?
Let’s start from the beginning. Both are matcha teas, but there are significant differences between them that I would like you to know:
Origin and Tradition:
Japan: Matcha has a long tradition in Japan, where it has been cultivated and consumed for centuries, especially in tea ceremonies. The production process has been refined and improved over generations.
China: Although China is the place of origin for tea in general, matcha as we know it today has deeper roots in Japanese tradition.
Cultivation Process:
Japan: Before harvest, the tea plants are covered with tarps to shade them and increase the concentration of chlorophyll, which gives matcha its intense green color.
China: Green tea powder from China may not always be cultivated using the same shading process, resulting in a less vibrant color and different flavor profile.
Grinding Technique:
Japan: Traditionally, Japanese matcha is ground slowly between two stones, producing an extremely fine powder.
China: Some green powders from China may be ground using more modern or less traditional methods, which can affect the texture and quality of the powder.
Flavor and Texture:
Japan: Japanese ceremonial matcha has a smooth, umami flavor and a vibrant green color. The texture is extremely fine.
China: Chinese green powder may have a less intense flavor, and the texture may not be as fine.
Usage:
Japan: Ceremonial matcha is specifically produced to be consumed on its own, without any additions.
China: While there are premium matcha teas in China that can be enjoyed alone, some may be more suitable for mixing in smoothies, baking, and other culinary preparations.
I always say that for drinking alone, the best is definitely the ceremonial matcha. But if you haven't tried it before, I recommend starting with the premium and moving on to the ceremonial when you get used to the flavor. Plus, the premium is cheaper! 😉

Can I whisk the tea with a metal whisk?
I always recommend using the traditional bamboo whisk or chasen, but if you’re not preparing matcha for a traditional ceremony and just want to enjoy the drink or use it in recipes, a metal whisk can work perfectly. Keep in mind that if you choose to use a traditional bowl or one made of a delicate material, avoid using metal utensils to prevent scratching or damaging the container.
Can I drink matcha tea during pregnancy? What about while breastfeeding?
Consuming matcha in moderate amounts (1-2g per day) is generally safe during pregnancy and lactation. However, due to the caffeine and other factors, it’s essential to talk to your doctor to determine what is best for your specific situation.
