Where does ceremonial matcha come from?
To really understand what ceremonial matcha is, we'll travel to Japan, which is where I discovered the tea that changed my life. There, matcha has been part of the culture for centuries, linked to Zen Buddhist monks and the famous tea ceremony, the chanoyu. In other words, this isn't a fad from yesterday; it has far more history behind it than some people think.
And why does it taste so different from other green teas? The secret lies in how it's grown. A few weeks before harvest, the plants are covered to protect them from the sun. That shade makes the leaf produce more chlorophyll (hence that intense green) and more L-theanine, the amino acid responsible for that sweetness and that focused calm that has all of us matcha-lovers smitten. Then the best leaves are steamed, dried and ground in stone mills at a very slow speed: barely a few grams per hour. Yes, you read that right. That's why you don't find good-quality matcha just anywhere.
Within Japan there are some very famous areas, like Uji, Nishio or Shizuoka. And ours? How do you know which is the best matcha tea?
Good question, because not everything sold as "ceremonial" really is. Here are the clues so no one pulls the wool over your eyes and you can tell the good stuff from what only looks the part:
- The colour. A good ceremonial matcha is a vivid green, almost fluorescent. If you see it dull, yellowish or leaning towards brown, that's a bad sign. It's probably low quality or has spent too long sitting on a shelf.
- The texture. Quality matcha is super fine, as if it were talcum powder. If you notice lumps or roughness, it may not be the quality you were after.
- The smell. It has to smell fresh, vegetal and sweetish, with that herbal vibe so characteristic of it.
- The taste. There should be umami and a natural sweetness. The aggressive bitterness that makes you pull a face isn't a sign of "powerful matcha", it's a sign of "so-so matcha".
Which is the best ceremonial matcha for you?
